Dino Kale Smoothies {Vegan}

Dino Kale Smoothie

So it’s been a while since I last posted a recipe on my blog. Ahem, you’ll have to pardon me for that. Everything involving social life and personal baking screeched to a halt as soon as I started working full-time. This has never been an excuse for me in the past, but in the past my job was always a nine to five and baking/cooking/blogging was a sweet escape from the corporate world. Now however, my job is cooking. Hurrah! I’m finally doing what I love and my poor blog took the back seat. I have a stack of recipes waiting to hit publish on, so the silence is over now and my sincerest apologies to my readers for leaving you high and dry ;)

As I had mentioned before I’ve been running a market stall at Fourways Farmer’s Market here in Johannesburg and by an extremely fortuanate turn of events, I snagged a stall at one of my favourite markets, The Bryanston Organic and Natural Market. It was a mission and a half to get in there due to the very strict criteria needed prior to being allowed trade at the market, but I’m now sitting pretty on Thursdays and Saturdays filling people’s bellies with seasonal and local veggie inspired grub. I create my weekly menu based on what I can pick up from the markets/farms or friends. I love it. It is a challenge at times but I wouldn’t have it any other way. My customer basis is building up every week and they keep coming back for the variety and colour they get in my food.

I also took a slightly longer than expected jaunt home to Ireland for the Christmas holidays and it was full of all kinds of amazing adventures excpet for the week which I spent with the sniffles! But now back in the thick of the summer sun in Johannesburg and a new year ahead of me with so many exciting opportunities to boot I couldn’t be happier.

I started off 2014 with a decision that I would be more mindful regarding my health and mental health. So this green monster smoothie is just the beginning of a series of nourishing and healthful recipes to come on the blog.

If there’s one thing I adore it is an ice cold smoothie in the morning straight after Bootcamp or yoga. This one in particular is bright green and will happily keep you going until early afternoon. With just a few simple ingredients, it’s a powerhouse of goodness. Dinosaur Kale is my favourite type of Kale, mainly because of it’s name but more so because it is a dense leaf full of Vitamin A, C, iron and fibre yet tastes sweeter than my other favourite, Curly Kale {the perfect variety for Kale Chips}. The Chia Seeds give a slight thickness, almost like a milkshake.

250ml Almond Milk

1 cup Dinosaur Kale

2 frozen banana {approx 100g)

1 tspn chia seeds

1 tspn cacao nibs

1 tspn Spirulina powder

1 tspn wheatgrass powder

Superfood Sprinkles

Blend the first three ingredients together and the optional superfood powders

Just before it’s finished blending add in the Chia Seeds/Superfood sprinkles

Top with some cacao nibs.

Enjoy x
